The Rules of the Rig
To keep the playing field level and the flavor authentic, we strictly enforce NEBS Classic guidelines:
-
Real Fire Only: Fuel is strictly limited to charcoal and wood. No pellets, no propane, no electricity for heat. (BBQ Guru devices/fan controllers are permitted).
-
Fresh on Arrival: All meats must be 100% raw and un-marinated upon arrival. Trimming ahead of time is fine, but zero seasoning/brining until after meat inspection!
-
Double-Blind Judging: Your food will speak for itself. Judging is based on Appearance, Taste, and Texture with absolute anonymity.
