The Main Event: NEBS Classic Categories
Chicken:
Teams can submit whole birds or parts, ranging from Cornish hens to farm-raised chicken.
Pork Ribs:
A battle of the best Loin Back, Baby Back, Spare, or St. Louis style ribs.
People’s Choice: Pulled Pork for a Cause
This fan-favorite category allows the public to decide the winner!
The Challenge:
Teams serve approximately 200 samples of their best pulled pork.
The Stakes:
The top three teams split
50% of the ticket sales
.
The Mission:
All remaining proceeds from the People’s Choice event are donated to the
Michael J. Fox Foundation for Parkinson’s Research
.
Competition Standards & Safety
The Battle at the Bow maintains professional-grade standards to ensure a fair and safe competition:
On-Site Preparation:
All meats must be inspected raw upon arrival. No pre-marinating or seasoning is allowed until after inspection.
Cooking Freedom:
Teams may use any fuel source—wood, charcoal, pellets, or propane—to achieve their signature flavor.
Strict Presentation:
Entries follow the
Standard NEBS Garnish
rules (lettuce, parsley, or kale), ensuring the focus remains entirely on the quality of the meat.
Safety First:
Every team must maintain a three-stage washing station and follow strict temperature controls to ensure the highest food safety.
Site & Facilities
Space:
Each team is provided a minimum 15’ x 20’ site.
Utilities:
On-site water is available, and nominal electricity (10amp) is provided for teams with 50’ extension cords.
Sustainability:
Dedicated trash and ash disposal are provided to ensure the site remains in pristine condition.
